Loving Low Carb Cooking

I'm really enjoying the challenge of creating delicious low carb food at the moment. Ridiculously, mainstream nutritional advice for diabetics is to eat lots of carbohydrates, even though this causes blood glucose levels to rise. I guess that advice keeps the drug companies in business. If my son sticks to eating my cooking, he always has perfect blood glucose levels. If he even eats one piece of bread, his levels are high for most of the day. As you can see here, low carb food is anything but boring and tasteless.
 First pic is Rocky Road after I discovered sugar free marshmallows and chocolate.
Mocha fudge cake. This is absolutely divine and so decadent. Best of all, full fat cream is on the menu.

Pizza, which tastes just like real pizza, but without all the toxic components of a wheat base. I made the base from almond meal and used bacon, minced beef, capsicum, olives, mushrooms, ricotta and motzeralla cheese for the topping. So tasty.
 
I've been making all manner of cakes, rolls and slices, - all low carb and suitable for my son to eat. I'll post more photos and recipes soon. Next post will be back to Legoland.

  1. Just this morning I read two articles in The Guardian that made me think of you and your son. They focus primarily on obesity, but there are many references to the problems caused by too much sugar, insulin, etc.

    Good job on making healthy yet indulgent foods! It's kind of sad how much unhealthy foods are being sold everywhere.
